I know, when you hear the words healthy and chocolate together you think,  right!  Also, when you read the ingredients in this healthy version of chocolate brownies you are going to give me the “eye roll”, but, believe me, these brownies are so delicious.

This recipe came from my beautiful, most amazing, trainer – who makes delicious food and true to form, these are pretty unbelievable.  So, if you want a yummy, chocolatey-yet-healthy brownie cupcake that is low carb, high protein, flour-free and delicious!  These are perfect.

Black beans, you say, I know what your thinking, but just try them! They have passed the “M” test , he said “These are the best brownies he has ever eaten!”

Healthy, Delicious, Chocolate Brownie Cupcakes

Ingredients
  

  • 1 15 oz can black beans, rinsed and drained
  • 2 eggs
  • 1/2 large ripe avocado (or you can substitute 1/3 cup avocado oil)
  • 1 tablespoon melted coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1/2 cup finely shredded unsweetened coconut
  • 1/2 cup dark chocolate, chopped

Instructions
 

  • Preheat oven to 350 degrees F. 
  • Butter or oil a muffin pan.
  • Place all ingredients into your blender or food processor.
  • Puree until ingredients form a smooth batter.
  • Bake for 20-25 minutes or until knife inserted in centre comes out somewhat clean and the top of the brownies begin to crack.
  • Cool in muffin pan on wire rack.
  • Garnish with coconut.
