Michael my husband loves baked beans and this is his favourite fast food dinner.  I have created a healthy version that are so creamy and delicious!  I do not add any sugar, molasses or ketchup…but don’t worry you won’t miss them!

Serves 8

Ingredients

  • 4 cups of dried navy or white beans, I use “Great Northern White Beans”, soaked in lots of water overnight.
  • 1 tablespoon olive oil
  • 2 large onions, diced
  • 6 slices of bacon, diced (optional if vegetarian)
  • 8 large tomatoes diced
  • 1 cup of water
  • 2 tablespoons of grated ginger
  • 2 tablespoons of mustard
  • Dash of Worcestershire sauce
  • 1 tablespoon of Maple Syrup (optional)
  • 1 tablespoon of hot sauce, I use habenero, but I like them a little spicy
  • Sea salt and ground pepper

Directions

  1. Cover the beans with water and soak over night. (check them an hour into soaking because you may need to add more water.
  2. After soaking, strain the beans and give them a good rinse.
  3. In a large 4 quart oven proof pot, on the stove top, add olive oil, onion and bacon and cook until tender.
  4. Add beans that have been strained.
  5. Stir in tomatoes, ginger, mustard, worcestershire sauce, maple syrup and hot sauce.
  6. Bring to a boil and then reduce the heat and simmer for an hour.
  7. Preheat oven to 250 degrees F.
  8. Put pot in a oven and bake until the beans are tender about 2 to 3 hours. Add more water if beans seem dry.

Serve hot and enjoy!

 

Dinner option:  Often I serve these with a fresh tomatoe and basil salad for a light dinner.

Wine Pairing:  I would go for a lighter red to compliment the beans like a Merlot or Pinot Noir.

If you are serving the beans with a fresh tomatoe salad for dinner, then I would go with a white like a Pinot Grigio to pair with the acid of the tomatoes.
