Festive Prosciutto and Cheese Sushi Style Appetizer Rolls
As the holidays are fast approaching and you are hosting family and friends. Here is a quick appetizer that is not only delicious but very impressive looking. The best part is they are a snap to make and can be prepared before your guests arrive. Enjoy!
Servings 4 rolls ( 32 pieces)
Prosciutto Rolls
- 16 slices prosciutto ham
- 1 cup creamy ricotta or chèvre cheese (can use boursin as well)
- 16 cherry tomatoes (cut in half)
- 1/2 red onion (chopped fine)
- 12 Basil leaves
- 1 cup arugula
- 1 cup pesto sauce (recipe below)
- 1/2 cup balsamic glaze (recipe below)
Pesto Sauce
- 1/4 cup pine nuts
- 4 cups fresh basil leaves
- 2 cloves garlic
- 2 tbsp fresh lemon juice
- 1/2 cup grated parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt and Pepper to taste.
Balsamic Glaze
- 2 cups balsamic vinegar
- 2 tbsp. brown sugar
Prepare Balsamic Glaze
In a saucepan mix balsamic vinegar with brown sugar. Heat over medium heat, stirring frequently until sugar has dissolved.
Bring to a boil. Reduce heat to low and simmer until the glaze has reduced by half and coats the back of a spoon, about 20 minutes.
Let the glaze cool, then pour into a jar, seal and store in the refrigerator.
How to assemble the Rolls
On a piece of plastic wrap lay 4 slices of ham side by side.
Spoon a layer of goat cheese on the bottom half of the ham. (Approximately 1 inch from bottom).
Top the cheese with finely chopped onions and a layer of pesto sauce.
Top with a layer of basil.
Then layer arugula on top of the basil.
Top with a layer of tomato half's.
Salt and Pepper to taste.
Begin rolling the ham around the filling using the plastic wrap to help.
Roll tightly with the plastic wrap and refrigerate until you are ready to serve.
Cut the rolls in 8 pieces.
Drizzle with balsamic vinegar glaze and serve.
