Green Salad with Edamame and Beets
This is a beautiful, nutritious and delicious summer salad.

mixed salad greens
1
cup
shelled edamame
thawed
1
medium raw beet
peeled and grated
1
tablespoon
chopped fresh cilantro
1
scallion
thinly sliced
juice of 1 lemon
2
tablespoons
extra-virgin olive oil
Salt and pepper to taste
Instructions
Peel the beet and shred it with a grater
Chop cilantro and scallion
Dressing: Whisk lemon juice, cilantro, olive oil, salt and pepper
In a large bowl or on a platter arrange the salad greens, grated beets, edamame
Drizzle dressing over the salad
Season with Salt and Pepper
Garnish with slices of scallion

If you want to prepare this salad ahead then r
efrigerate the salad and dressing separately for up to 2 days.
