Healthy, Delicious, Chocolate Brownie Cupcakes

Ingredients
  

  • 1 15 oz can black beans, rinsed and drained
  • 2 eggs
  • 1/2 large ripe avocado (or you can substitute 1/3 cup avocado oil)
  • 1 tablespoon melted coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1/2 cup finely shredded unsweetened coconut
  • 1/2 cup dark chocolate, chopped

Instructions
 

  • Preheat oven to 350 degrees F. 
  • Butter or oil a muffin pan.
  • Place all ingredients into your blender or food processor.
  • Puree until ingredients form a smooth batter.
  • Bake for 20-25 minutes or until knife inserted in centre comes out somewhat clean and the top of the brownies begin to crack.
  • Cool in muffin pan on wire rack.
  • Garnish with coconut.
