Monte Cristo Sandwich
It is believed that the Monte Cristo started off as the French Croque Monsieur, a grilled cheese sandwich with Gruyere and ham.

- 4 slices bread of your choice, I use a multigrain
- 2 cups grated cheese, I use fontina
- 8 slices roasted turkey meat (you can use ham)
- 2 teaspoon dijon mustard
- 2 teaspoon mayonnaise
- 1 teaspoon butter
- 1 egg
Mix the mustard and mayonnaise together.
Grate the cheese - grated cheese melts more evenly in your sandwich.
Beat the egg and place on a plate for easy dipping.
Assemble the Sandwich
Butter each piece of bread with the mayonnaise mixture.
Put half of the cheese on one slice of bread, pack down firmly, then top with the turkey slices, then top with the remaining cheese. Cover with the other slice of bread, pressing together firmly.
Heat a non-stick frying pan on medium heat, add a little butter.
Dip the sandwich in your egg mixture on both sides, then place in your fry pan.
Fry on one side for 2 minutes then flip your sandwich over and cook for 3 more minutes on this side. Press down with your spatula.
Continue cooking until your sandwich is golden brown and the cheese is lightly melted.
Enjoy!
I simply use turkey in my Monte Cristo but if you prefer ham then feel free to use the meat of your choice.
Vegetarian Friendly: I often substitute the roast turkey with avocado or tomatoes and it is really delicious.
