Tuna Salad

This tuna salad is delicious as a salad or in a sandwich!
Servings 2 Sandwiches or 2 cups of tuna for salad
Tuna Salad
- 2 5 ounce cans tuna, packed in oil, drained
- 2 tablespoons mayonnaise, preferably Hellmann’s Olive oil
- 2 tablespoons butter
- 3 tablespoons celery, finely chopped
- 3 tablespoons granny smith apple, finely chopped
- 2 tablespoons onion, finely chopped
- 3 cornichons, finely chopped
- 1 tablespoon capers, rinsed, patted dry, and chopped
- 5 large green olives, pitted and chopped
- 1/2 small lemon juice, juiced
- Freshly ground pepper
- 2 tablespoons chives or parsley, finely chopped
- 1 head romaine lettuce, or your favourite greens
Tuna Salad Sandwich
- 4 slices multi-grain bread or 2 English muffins
- 4 slices lettuce
- 4 - 8 slices tomato, thinly sliced
- 4 slices onion, thinly sliced
- 1/2 avocado, mashed
- 4 slices cheddar cheese
Tuna Salad
Using a fork, mix the tuna with mayonnaise.
Add the celery, chopped onion, cornichons, capers, olives, and toss to combine. Add a squirt of lemon juice and pepper. Taste and see if you'd like more mayonnaise, onion, or cornichons.
Add more lemon juice and pepper to taste. Stir in the chives and parsley.
The tuna salad is good to go as soon as it’s made, but it’s even better after a couple of hours in the fridge.
If you're serving this as a salad, simply spoon over your favourite greens.
Tuna Salad Sandwich
If you’re using English muffins make open-face sandwiches.
Assemble: Butter the muffins with butter and avocado, add a leaf of lettuce and a slice of cheddar cheese on each muffin and top with tuna salad, finish with tomato and onion.
If you’re using sliced bread, prepare traditional sandwiches.
Assemble: Top 2 slices of bread with butter, avocado, 1 piece of lettuce, tomato, and onion, then spread the tuna on top and finish with a slice of lettuce, tomato, onion, and cheese. Top with a slice of buttered bread.
