- 1 carcuss Turkey or Chicken Bones
- 1 onion, chopped
- 2 carrots, chopped
- 1/2 cup parsley
- 4 ribs celery, chopped
- 1 tablespoon Herb de Provence
- 1 bay leave
- 1 teaspoon peppercorns
- 8 cups filtered water
- Salt and Pepper
There are a couple of ways to make homemade stock, one method is to use leftover carcass after roasting a chicken or turkey. The second method is to use raw chicken backs and wings. Simply put the leftover bones, vegetables, and herbs in a large pot.
If using raw chicken sauté and brown before putting in a large pot.
Cover the bones and vegetables with water and bring to a boil.
Simmer for 4 to 6 hours – skimming off any foam that comes to the surface.
Remove the bones and vegetables.
Strain the stock.
Put the stock in sealed jars for use in sauces and soups.
