This is incredible vegetarian chili. It is perfect for an everyday dinner or lunch.
I usually make a big pot and have it for dinner the first night and then pack it for lunches the rest of the week.
I try to eat 10 vegetables a day and this is such a delicious way to get your vegees!
Ingredients:
1 large Green Pepper
1 large Red Pepper
2 Shallot
4 large Celery sticks
2 large leek
3 cloves of garlic
1 hot chilli of choice ( I use Jalepeno or Sereno)
2 large bok choy
3 cups of spinach
2 Green Onion (for garnish)
½ cup grated cheese (for garnish and optional)
½ cup Cilantro (save some for garnish)
2Tbsp Oregano
1 can of black beans drained and rinsed ( can use fresh)
2 cups corn kernels (I use fresh, but you can use frozen)
Instructions:
- Chop up all the Vegetables and sautee in the olive oil for about 15 minutes
- Add corn, black beans and canned tomatoes. Continue cooking for another half hour
- Serve garnished with cilantro, green onion, grated cheese
