Vegee Chili

This is incredible vegetarian chili.  It is perfect for an everyday dinner or lunch.
I usually make a big pot and have it for dinner the first night and then pack it for lunches the rest of the week.
I try to eat 10 vegetables a day and this is such a delicious way to get your vegees!

Ingredients:

1 large Green Pepper
1 large Red Pepper
2 Shallot
4 large Celery sticks
2 large leek
3 cloves of garlic
1 hot chilli of choice ( I use Jalepeno or Sereno)
2 large bok choy
3 cups of spinach
2 Green Onion (for garnish)
½ cup grated cheese (for garnish and optional)
½ cup Cilantro (save some for garnish)
2Tbsp Oregano
1 can of black beans drained and rinsed ( can use fresh)
2 cups corn kernels (I use fresh, but you can use frozen)
Instructions:

  1. Chop up all the Vegetables and sautee in the olive oil for about 15 minutes
  2. Add corn, black beans and canned tomatoes. Continue cooking for another half hour
  3. Serve garnished with cilantro, green onion, grated cheese
