Now that the days are getting cooler, I love having a big pot of chili or a hearty soup simmering away. 🍂

This is one of my favourite healthy—but totally delicious—chili recipes. It’s lighter than most versions, yet packed with protein, flavour, and fibre.

What really makes this chili stand out is the delicious combination of spices and herbs. The cumin, ancho chili, and curry spices create a wonderful depth of flavour with just the right amount of warmth and spice.

You can dress this chili up with your favourite toppings and serve it alongside a loaf of fresh, warm bread for the perfect cozy meal. 🌶️🥣🍞

It’s hearty, nourishing, flavourful, and exactly the kind of meal I crave on a cool fall day!

I’ve served this chili as a delicious dinner after a day of hiking or skiing, especially when I’ve had company over, and it has always been a crowd-pleaser.

To dress it up a little, I love serving warm, fresh bread in an elegant linen bread basket. It’s such a simple touch, but it makes the meal feel extra special and inviting.

Check out my instructions for creating this easy and elegant bread basket—it’s the perfect finishing touch for a cozy meal shared with family and friends.
