Chocolate Dipped Peanut Butter and Date Truffles

Ingredients
  

  • 1 cup dates, soft, pitted
  • 3 tablespoons peanut butter or other nut butter
  • 1 teaspoon vanilla Dash of sea salt1/4 cup
  • 1 pinch salt
  • 1/4 cup (50 grams) 80% cocoa dark chocolate, melted
  • 1 teaspoon unsalted butter (you can use avocado oil if you are vegan)
  • 1 teaspoon chia seeds, for garnish

Instructions
 

  • Start with soft dates, if you are using firm dates then soak the dates in water until they soften.
  • In a food processor combine the dates, peanut butter, salt, and vanilla. Pulse approximately 15 times and then process until the filling forms a smooth paste.
  • Put the mixture in the freezer for 5 minutes, then form into small balls.
  • Place the date balls on a parchment lined cooking sheet and return them to the freezer for 10 minutes.
  • Melt the chocolate with butter.
  • Using a toothpick, dip and roll the balls in the melted chocolate and place on the parchment paper lined cooking sheet.
  • Garnish with chia seeds.
  • Return the truffles to the freezer for 20 minutes.
  • Remove the truffles from the freezer and store them in a sealed container in the refrigerator. Enjoy!
