You will not believe how amazingly quick and easy these truffles are to prepare and how delicious they taste! They are gluten free, vegan friendly and they do not have any added sugar.
I use natural peanut butter which has no added sugar, preservatives or shortening and I use organic fair-trade chocolate.
These are a decatant treat to put out with coffee at the end of an evening dinner party.


Chocolate Dipped Peanut Butter and Date Truffles
Ingredients
- 1 cup dates, soft, pitted
- 3 tablespoons peanut butter or other nut butter
- 1 teaspoon vanilla Dash of sea salt1/4 cup
- 1 pinch salt
- 1/4 cup (50 grams) 80% cocoa dark chocolate, melted
- 1 teaspoon unsalted butter (you can use avocado oil if you are vegan)
- 1 teaspoon chia seeds, for garnish
Instructions
- Start with soft dates, if you are using firm dates then soak the dates in water until they soften.
- In a food processor combine the dates, peanut butter, salt, and vanilla. Pulse approximately 15 times and then process until the filling forms a smooth paste.
- Put the mixture in the freezer for 5 minutes, then form into small balls.
- Place the date balls on a parchment lined cooking sheet and return them to the freezer for 10 minutes.
- Melt the chocolate with butter.
- Using a toothpick, dip and roll the balls in the melted chocolate and place on the parchment paper lined cooking sheet.
- Garnish with chia seeds.
- Return the truffles to the freezer for 20 minutes.
- Remove the truffles from the freezer and store them in a sealed container in the refrigerator. Enjoy!
