Ingredients

peanut butter,
I use natural peanut butter with no salt and no sugar

tbsp
honey
1
tbsp
vanilla extract
1
egg
3
tbsp
ground old-fashioned oats
2
tbsp
ground flaxseed,
you can substitute almond flour
1

Instructions
Preheat oven to 350 degrees F.
Grind your old-fashioned oats and flaxseed in a food processor until powdery. Alternatively, you can use a mortar and pestle if you have one.
Add all ingredients to a bowl and mix well.
Scoop dough with a teaspoon and roll into small balls, place on a baking sheet lined with parchment paper.
Gently flatten the tops of the cookies using a fork or, as I do a meat tenderizer.
Bake for 12 minutes, or until bottoms of cookies have browned a little.
Transfer cookies to a wire rack and let cool completely.
