Don’t you just love a tea or coffee and cookie break? Now that we are all working from home we have to find ways to make it fun. At our house, we started having an imaginary coffee cart come around mid-morning and mid-afternoon. It makes me smile when “M” says…the coffee cart is coming by – what can I get you?

Healthy Peanut Butter Cookies

So I thought I would make a little treat to go with our coffee today. Here is my recipe for gluten-free peanut butter Cookies. Enjoy! I would love to hear what you are serving on your coffee cart.

These cookies are easy, gluten free and have minimal sugar.

Just six ingredients – Peanut butter, flax seeds, old-fashion oats, egg, vanilla,honey!

Ingredients
  

  • 1 cup peanut butter, I use natural peanut butter with no salt and no sugar
  • 2 tbsp honey
  • 1 tbsp vanilla extract
  • 1 egg
  • 3 tbsp ground old-fashioned oats
  • 2 tbsp ground flaxseed, you can substitute almond flour
  • 1 Pinch salt

Instructions
 

  • Preheat oven to 350 degrees F.
  • Grind your old-fashioned oats and flaxseed in a food processor until powdery. Alternatively, you can use a mortar and pestle if you have one.
  • Add all ingredients to a bowl and mix well.
  • Scoop dough with a teaspoon and roll into small balls, place on a baking sheet lined with parchment paper.
  • Gently flatten the tops of the cookies using a fork or, as I do a meat tenderizer.
  • Bake for 12 minutes, or until bottoms of cookies have browned a little.
  • Transfer cookies to a wire rack and let cool completely.
