This salad is a quick salad to serve at any of your BBQ dinner parties this summer. The salad is simply beautiful, very delicious and packed full of nutrients. The best part about this salad is that it can be prepared up to two days before your dinner party. I hope you love it as much as I do.


Green Salad with Edamame and Beets
This is a beautiful, nutritious and delicious summer salad.
Ingredients
- 2 cups mixed salad greens
- 1 cup shelled edamame thawed
- 1 medium raw beet peeled and grated
- 1 tablespoon chopped fresh cilantro
- 1 scallion thinly sliced
- juice of 1 lemon
- 2 tablespoons extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Peel the beet and shred it with a grater
- Chop cilantro and scallion
- Dressing: Whisk lemon juice, cilantro, olive oil, salt and pepper
- In a large bowl or on a platter arrange the salad greens, grated beets, edamame
- Drizzle dressing over the salad
- Season with Salt and Pepper
- Garnish with slices of scallion
Notes
If you want to prepare this salad ahead then refrigerate the salad and dressing separately for up to 2 days.
