This is a six napkin burger – juicy, luxurious and so delicious! The secret is in the egg salad sauce that tops the grilled salmon. This egg salad has all the flavours to enhance the salmon…creamy egg, dill, capers, lemon! A heavenly partnership.

A number of years back the Hotel Vancouver served these salmon sandwiches at their restaurant but they have now taken them off their menu. So I decided to recreate this delicious burger. Here is my version of the Salmon Burger!

Salmon Burger
Ingredients
- 4 soft burger buns
- 4 large leaves lettuce
- 2 organic heirloom tomatoes, 4 thick slices
- 4 eggs, hard-cooked
- 2 tablespoons mayonnaise
- 1 teaspoon fresh dill, finely chopped
- 1 tablespoon capers
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 4 fillets wild fresh salmon
- salt and pepper
- 1 tablespoon Italian parsley, chopped fine for garnish
Instructions
- Hard cook eggs in salted boiling water for seven minutes.
- Cool and peel eggs.
- Prepare the egg salad: In a medium sized bowl add, eggs, mayonnaise, dill, capers, lemon, salt and pepper. Mix well.
- In a saucepan, melt 1 tablespoon of butter and cook salmon fillets for five minutes a side. (You can grill them if you prefer.)
- Heat the burger buns in a warm oven.
- Butter the burger buns and assemble the burger.
Burger Assembly
- Start with the bottom half of the burger bun.
- Place a lettuce leaf on the bottom half of the burger bun.
- Top the lettuce with a Tomatoe slice.
- Salt and Pepper the tomatoe.
- Place the Salmon fillet on top of the tomatoe.
- Add a generous scoop of egg salad over the salmon.
- Garnish the egg salad with chopped parsley.
- Finish with the top burger bun half.
